Attempt our deliciously healthy thai noodle soup recipe - a traditional comfort dish it is perfect for warming up in wintry weather.
Ingredients
- 10.5oz quorn meatless portions or quorn vegan meatless pieces
- 2 tbsp vegetable oil
- 1 massive onion, sliced
- 2 cloves garlic, crushed
- 1 tsp floor cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- ½ tsp cayenne pepper
- 7oz coconut milk
- 4 cups vegetable inventory
- 2 carrots, peeled and sliced
- ½ cup infant corn, sliced
- ½ cup sugar snap peas, sliced in 1/2
- 50g (1 cup) rice noodles, cooked to percent commands
- 2 spring onions, finely sliced
Method
- Heat 1 tbsp oil in a huge saucepan and sauté the onions over a medium heat for five mins. stir within the garlic and spices and cook dinner for 2 extra minutes.
- Add the coconut milk, vegetable inventory and vegetables. bring to the boil after which simmer for 20 mins.
- In the meantime, in a separate skillet, add 1 tbsp oil and fry the quorn meatless quantities for 7 mins, until barely golden.
- Add the cooked rice noodles to the soup, alongside aspect the quorn meatless pieces. stir properly and permit to simmer for three minutes.
- Garnish with spring onions and serve warm with crusty bread
